PROBLEM TO BE SOLVED: To provide an industrially advantageous method for producing anα-hydroxy acid or an ammonium salt of theα-hydroxy acid from anα-hydroxynitrile by having a sufficient initial specific activity, i.e. the initial production rate in producing theα-hydroxy acid or the ammonium salt of theα-hydroxy acid from theα-hydroxynitrile using a nitrilase. SOLUTION: The method for producing theα-hydroxy acid or the ammonium salt of theα-hydroxy acid includes reacting the nitrilase with theα-hydroxynitrile. The method for producing theα-hydroxy acid or the ammonium salt of theα-hydroxy acid comprises ammonia or an ammonium salt in the initial reaction solution before adding theα-hydroxynitrile.
