Dubu (bean curd) bavarois, and a method for preparing the dubu bavaroisor or soybean milk pudding are provided to remove the offensive odor of soybean. A method for preparing dubu bavarois comprises the steps of preparing soybean milk; mixing 5 ~ 50 parts by weight of the soybean milk with 5 ~ 70 parts by weight of dubu, 3 ~ 15 parts by weight of oligosaccharide, 5 ~ 25 parts by weight of sugar and 0.5 ~ 10 parts by weight of coffee or 0.1 ~ 8 parts by weight of cinnamon, grinding the mixture, and filtering it with a sieve to form a soybean milk mixture; soaking a plate gelatin or a powder gelatin in water; mixing the soybean milk mixture with the soaked gelatin and boiling it with stirring on a weak fire to form a soybean milk gelatin mixture; whipping fresh cream to generate bubble; cooling the soybean milk gelatin mixture and mixing it with 5 ~ 50 parts by weight of the whipped fresh cream to form a bavarois raw material; and cooling the bavarois raw material put in a container in a refrigerator to form the dubu bavarois. |
