<P>PROBLEM TO BE SOLVED: To provide a method for efficiently obtaining cysteine from γ-GC (γ-glutamylcysteine), and, in turn, to provide an excellent method for producing a food material highly containing the cysteine from a yeast extract. <P>SOLUTION: This method for producing the food material highly containing the cysteine comprises producing the yeast extract from a yeast cell body containing the γ-GC, concentrating the extract, while controlling its temperature at 60°C or lower, to prepare the food material of a liquid form having a solid concentration of ≥ 10%, and maintaining the food material at a temperature of 70-130°C (conducting two-stage heating under a specified condition). <P>COPYRIGHT: (C)2005,JPO&NCIPI |
