A composition for preventing and treating Alzheimer disease is provided to reduce accumulation of amyloid beta-protein lower saturated fatty acid without side effect. A composition for treating and preventing Alzheimer's disease comprises a monacolin isolated from red mold rice, anti-inflammation agent, antioxidant compound. The active minimum content of monacolin is 100mug per 1 g of red mold rice. The active minimum content of antioxidant compound is more than 40mug per 1g of red mold rice. The antioxidant compound is a dimerumic acid, tannin, phenol compound, monounsaturated fatty acid, sterols or superoxide dismutase(SOD). A method for manufacturing the composition for preventing and treating Alzheimer's disease comprises: a step of washing and sterilizing rice seed under the high pressure and high temperature; a step of culturing Monascus purpureus in medium; a step of stirring medium and providing moisture;; a step of stirring under the specific temperature and afterripening; a step of collecting fermented product of red mold rice and drying; a step of pulverizing the fermented product; and a step of resolving the fermented product in water.
