PROBLEM TO BE SOLVED: To efficiently obtain a new oil and fat composition useful as a dietary supplement a health food, etc., by treating oils and fats containing (n-6)-based docosapentaenoic acid and docosahexaenoic acid, etc., with a lipase derived from a bacterium in the presence of a medium chain length fatty acid. SOLUTION: Oils and fats containing at least one of (n-6)-based docosapentaenoic acid and docosahexaenoic acid obtained from a culture product of a bacterium [e.g. Ulkenia SAM 2,179 strain (FERM BP-5,601), etc.], belonging to the genus Ulkenia, Schizochytrium, Thraustochytrium, etc., capable of producing at least one of (n-6)-based docosapentaenoic acid and docosahexaenoic acid are treated with a lipase derived from a bacterium (e.g. Pseudomonas KW1-56 strain, etc.), belonging to the genus Pseudomonas in the presence of a medium chain length fatty acid to efficiently give the objective oil and fat composition containing at least one of (n-6)-based docosapentaenoic acid and docosahexaenoic acid. |
