<P>PROBLEM TO BE SOLVED: To provide chicken nugget having soft and light palate feeling, and having less fat and relatively inexpensive compared to other meat from a health-conscious viewpoint, and using as the raw material, chicken as a health high protein source, and also to provide a method for producing the chicken nugget. <P>SOLUTION: This method for producing the chicken nugget comprises adopting a temperature-adjusting process of mixing thin film-like thin ice with a chicken nugget raw material mixture containing chicken mince after a mixing process, adjusting temperature while mixing at a low temperature, and a slowly freezing to cool a chicken nugget formed fried body after a frying process followed by slowly freezing.
