摘要 A sugar-free jelly composition using gelatin and a preparation method thereof are provided to prevent obesity, diabetes and decayed tooth while showing the similar sweetness and quality to existing jellies by using sugar alcohols instead of sugar, malt and fructose. A sugar-free jelly composition comprises 100 parts of glucide raw material and 3-10 parts of gelatin. The glucide raw material contains 50-90wt% of polyglycitol syrup and 10-50wt% of maltitol syrup. The polyglycitol syrup contains 7-10wt% of maltitol, 3-5wt% of sorbitol, 10.0-15wt% of maltotritol and 70-80wt% of sugar alcohols. A method for preparing the sugar-free jelly composition comprises the following steps of: preparing 90g of polyglycitol syrup and 10g of maltitol syrup; and adding 5.0g of gelatin, 0.8g of citric acid serving as an acidulant, 0.4g of DL-malic acid and 0.3g of apple flavor.
