An eel grilling sauce using hot pepper paste as a main ingredient and a preparation method thereof are provided to show excellent flavor and nutritious values without the greasy and fishy smell by adding alcohol drink, malt, steamed garlic paste, pepper powder and red pepper paste. An eel grilling sauce contains 50-500 parts of red pepper paste, 5-50 parts of alcohol drink, 10-100 parts of malt, 5-50 parts of steamed and crushed garlic and 0.01-1 part of pepper powder. The eel grilling sauce additionally contains one or more additives selected among 0.01-0.1 part of seasoning, 0.1-5 parts of ginger, 0.1-5 parts of large leek, 0.5-5 parts of Codonopsis lanceolata and 0.001-0.1 part of sesame. The ginger, large leek and Codonopsis lanceolata are crushed or finely chopped. The eel grilling sauce additionally contains finely chopped garlic or crushed garlic besides the steamed and crushed garlic. A method for preparing the eel grilling sauce comprises the following steps of: trimming eels; primarily grilling the eels; spreading the eel grilling sauce on the front side and back side of the eels; and secondarily grilling the eels.
