摘要 A doenjang containing Acanthopanax senticosus is provided to remove the bad smell of the soybean paste and improve taste of soybean paste and quickly age doenjang by adding Acanthopanax senticosus fermentation solution. A manufacturing method of the doenjang in which the Acanthopanax senticosus is contained comprises the following steps of: a step manufacturing the soybean malt by boiling the bean with 5~7 hour; a step fermenting the soybean malt bound with the rice straw at 25~30deg.C for 40~50 days; a step drying the fermented soybean malt in the place where sunlight and ventilation go well with 4~5 days; a step pulverizing the dried soybean malt into small pieces through crusher; a step mixing 30~40kg of soybean malt which the small pieces is pulverized and 8~10kg of one among the grain of barley, the glutinous rice, and the nonglutinous rice; a step for dipping doenjang which puts 1~3kg of salt and 1~5kg of undiluted solution including the cayenne pepper or the red pepper seed 3~5kg and 5~10kg of the root of Acanthopanax senticosus into the mixing material; and a step for being aged with 3~6 month the doenjang in which the Acanthopanax senticosus is contained after passing the dipped step.
