<p><P>PROBLEM TO BE SOLVED: To provide a refined rice wine of low sugar content, and to provide a production method thereof. <P>SOLUTION: The prevention of life-style related diseases such as metabolic syndrome is in full flower and health-intention of the consumers is increased. A refined rice wine of≥0.05 but≤1.23 wt.% total sugar content or a refined rice wine of≥0.01 but≤0.61 wt.% glucose content is provided. These refined rice wines are obtained by adding transglycosidase and pullulanase at preparation of a refined rice wine production method of liquefactive preparation. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
