<p>A method of creating a wheat variety characterized by comprising crossing a first wheat variety having the 1B chromosome but lacking ?5 gliadin gene with a second wheat variety having been grown for edible purpose and then repeatedly back crossing with the second wheat variety to thereby create a wheat variety which is free from ?5 gliadin gene and yet holds most of the genes of the second wheat variety as described above. As the first wheat variety, a chromosome deletion line 1BS-18 of Chinese Spring (Triticum aestivum cv. Chinese Spring) can be used.</p>
