A method of brewing ethanol includes at least the following steps: mixing raw material with water and milling to obtain a mash comprising raw material residue; adding fermenting enzyme to the mash; fermenting the mash comprising raw material residue and fermenting enzyme; distilling the mash after fermentation to obtain ethanol.
