YACON CHUNGGUKJANG TO PREVENT AND TREAT OSTEOPOROSIS AND HYPERLIPIDEMIA

Yacon(polymnia sonchifolia) chunggukjang is provided to reduce the total cholesterol and triglyceride in blood and to increase bone metabolism-related hormone and bone density. A method for preparing yacon(polymnia sonchifolia) chunggukjang comprises the steps of: (a) dipping beans in water and removing moisture; (b) adding yacon 5-10 weight% based on the dry bean to the beans from which moisture is removed, and steaming; and (c) inoculating chunggukjang spawn 1-3%(v/w) to a mixture of steamed soybeans and yacon and fermenting it at 45-55°C for 5-6 days.
