A bean curd cracker manufacturing method is provided to preserve all kinds of the nutrients of the bean curd by baking by using oven or the heat after mixing and kneading the bean curd and all kinds of the additives with the predetermined amount and contain the taste of xylitol, the green tea or the leaf of capsicum etc so that various desires of consumers are satisfied. A bean curd cracker manufacturing method comprises the following steps of: a step which mixes and kneads the bean curd 30~35 weight%, gluten 16~18 weight%, egg 2~3 weight%, dried whole milk 19~21% weight, butter 2~4 weight%, and powder 1~1.5 weight% and one selected from the group consisting of xylitol, and the green tea or the leaf of capsicum; a step for pulling slimly the dough out after putting the dough into a roller or compressing the dough; a step for molding the dough as a fixed size and shape by putting into molding frame; and a step for heating moldings in oven at 150~170deg.C for 20!30min. |
