A method for preparing the medical herb modified gochujang (Korean hot pepper paste) is provided to improve nutrition, taste and perfume by using various medical herbs. A method for preparing the medical herb modified gochujang comprises the steps of mixing black bean powder, buckwheat powder, Cassia tora L. powder, Job's tears powder, Glycyrrhizae Radix powder, Puerariae Radix powder, butterbur powder, stevia powder, ginger powder, Salicornia Herbacea powder and rice straw ash with stirring for 30~40 min; steaming the mixture at 110~20°C for 40~60 min and cooling it to 130~39°C; putting the mixture into a rice straw powder-spreaded molding box so as to mold it; maturing it at 28~34°C and at a humidity of 50~60% for 1~2 days; fermenting the matured one and storing it at 5~8°C for 20~30 days to make meju; cutting the low temperature stored meju into small pieces, putting them in a net bag, and dipping it in the water containing liquid salted fish, Salicornia Herbacea powder and bay salt to mature it; mixing the meju, the dipped meju and powdered hot pepper with stirring and maturing the mixture at a low temperature; and heating the prepared gochujang at 80~90°C for 30~60 min for sterilization. |
