A kjeldahl evaporator and a method for operating the kjeldahl evaporator are provided to experiment in order to calculate nitrogen amount included in corresponding food required in case of calculating amount of the protein included in particular food product. A kjeldahl evaporator contains an analysis tube generating gas by dissembling a sample and injecting steam; a cooling device(115) connected in the analysis tube and cooling the gas generated from the analysis tube by cooling water flowing outside the cooling device; and a flask(110) taking away the condensated water connected to an end of the cooling device. A method for operating the kjeldahl evaporator includes an auto process mode, a command mode, a memory storage mode, a memory erase mode, a sensor mode and an RS-232C mode.
