<P>PROBLEM TO BE SOLVED: To provide a fresh vegetable processing method capable of enriching useful component (allysine) in garlic. <P>SOLUTION: This fresh vegetable processing method comprises subjecting garlic to high pressure treatment of 400 MPa at ≤20°C, and holding the garlic subjected to high pressure treatment, at 10°C for 9 days. <P>COPYRIGHT: (C)2009,JPO&INPIT |
