Method and apparatus for preserving the contents of beverage containers

A stopper for a wine bottle includes a butterfly valve with operates bi-directionally to allow the passing of gas into or out of the bottle if a pressure differential threshold is achieved. To preserve wine left in the bottle after a glass has been poured, the stopper is place on the neck of the bottle and gas (air) is evacuated through the valve from the bottle, then an inert gas such as carbon dioxide is pumped into the bottle until the pressure is at the pressure differential threshold.
