<P>PROBLEM TO BE SOLVED: To provide food and drink having relaxation effect through using bean curd lees which are disposed of as industrial waste. <P>SOLUTION: Dried bean curd lees which contain γ-aminobutyric acid are obtained, by adding 5 wt.% of sodium glutamate to raw bean curd lees which are obtained by squeezing boiled soybeans, followed by excluding soymilk, sowing Lactobacillus brevis (NBRC12005) on the product, fermenting the product in a tank in an anaerobic condition at 30°C for 48 h, to produce γ-aminobutyric acid, and sterilizing the bean curd lees at 95°C for 2 min followed by drying and crushing with a crush-type dryer. <P>COPYRIGHT: (C)2009,JPO&INPIT |
