The present invention relates to a process for producing fat-reduced fried foods which are suitable for human and animal consumption, in particular fried snack pellets, i.e. noodle-like foods and food products which are produced from a dough which is rolled out or extruded, if appropriate dried, and subsequently fried. This dough can have been produced, inter alia, from dried potato products, cereals, cereal products having, e.g., additions of spices, herbs, vegetables, soya, fish and/or meat. As cereal or starch source, use is customarily made of maize, rice, wheat or cassava. By means of the process according to the invention, a fat-reduced fried food, a fried food, preferably a fried snack pellet, having a porous dough structure can be produced. |
