Unripe citrus essential oil extracts having anti-inflammatory activity are provided to be usable in various fields including drug, food and cosmetics due to anti-inflammatory activity which is harmless for the human body. A preparation method of unripe citrus essential oil extracts having anti-inflammatory activity comprises a step for peeling the outer cover of citrus fruits; a step for putting 2-4 liter of water per 400 g of the outer cover of citrus fruits; a step for distillation-extracting the mixture at 70 ~ 80 ‹C for 10 ~ 15 hours.
