A manufacturing method of fermented herb wine is provided to ferment ferments to the fermented herb wine 2 times, to age the fermented herb wine using environment-friendly medicinal plants, to manufacture pure fermented herb wine without fermentation equipment or environmental contamination preventing facility conveniently and to cause no crapulence such as headache and cardialgia. A manufacturing method of fermented herb wine comprises steps of: manufacturing a crude liquor by injecting a 50-200 parts by weight of aqueous solution consisting of gluten, millet jelly and sugar into 10 parts by weight of one or more medicinal plants selected from a group consisting of cereal, fruit and material of herbal medicine, and being fermented and aged for 2-4 days at a room temperature; and injecting the aqueous solution consisting of the millet jelly and the sugar in the crude liquor manufactured in the first fermentation step and being fermented and aged for 6-8 days. |
