The invention relates to a process for the production of protein from animal products or raw materials and an apparatus for carrying out the process. To produce protein products from animal raw materials while retaining vitamins and digestible protein compounds as far as possible, the animal raw material is comminuted and mixed with alcohol for a specified period. The ratio of raw material to alcohol in the mixture is 1 : 2. The mixture is separated into the two phases (liquid and solid = protein), and the solid is subsequently dried. This gives a disinfected protein product with a long shelf life and good storage stability. The alcohol employed can be recovered with ease. Phase separation is effected by means of a centrifuge.
