摘要 PURPOSE:A combination of succinic monoglyceride and glycerol fatty acid ester at a specific ratio is used as an emulsifier to give soft ice cream with improved over-run and good texture. CONSTITUTION:The objective ice cream is obtained using an emulsifier containing 1pt.wt. of succinic monoglyceride and 0.1-3.0pts.wt. of glycerol fatty acid ester.
