PURPOSE:To produce a composite food having the palatability similar to shrimp, crab, cuttlefish or lobster, etc., by mixing a fish paste product with a fibrous structure to impart a directivity to the product and, at the same time, pressing the mixture in a molding frame. CONSTITUTION:A fibrous structure is produced by conventional method from a kneaded mixture of fish or cattle meat, separated vegetable protein, polysaccharide, etc. The fibrous structure is mixed into various paste product made from animal proteins such as fish meat, cattle meat, etc., vegetable proteins such as soybean protein, wheat protein, etc., to orient the fibrous structure along a definite direction in the obtained kneaded mixture and, at the same time, the mixture is poured into a molding frame and coagulated by heating under pressure. |
