PURPOSE:To prepare macaroni or spaghetti made of 100% soybean by adding glucan and/or sesame to soya milk, coagulating and forming the mixture and heating the product. CONSTITUTION:Soybeans soaked with water are ground, crushed and separated into soya milk and bean curd refuse by filtration and the obtained soya milk is boiled. As an alternative, crushed soybeans are boiled and filtered to separate bean curd refuse. The soya milk is mixed (based on 1,000g of soybean before crushing) with (A) 5-200g of sesame or (B) 80-1,000g of glucan consisting of 300-1,000g glucose units bonded through glucoside bonds or (C) 5-100g of sesame and 50-850g of glucan consisting of 100-1,000 glucose units bonded through glucoside bonds. The obtained soya milk mixture is stirred, poured into a prescribed vessel, coagulated and formed in the form of macaroni or spaghetti and dried to remove water from the formed product. |
