The present disclosure refers to a system for determining the meat carcass maturity, which consists in an algorithm for activating an illumination system and a digital camera for acquiring an image of the meat which is subsequently processed in order to separate the different tissue zones and evaluating ossified areas in cartilages, as well as determining the maturity group at which the meat carcass pertains. The purpose of the present invention is to provide a systemic tool for obtaining the maturity degree of meat carcass by a totally novel process based on a combination of devices and methods which are useful for quickly determining the meat maturity.
