摘要 PROBLEM TO BE SOLVED: To provide a method for producing an alcohol, by which sundry bacteria can quickly be removed to recover from a contaminated state in a short period, when contaminated with the sundry bacteria. SOLUTION: This method for producing the alcohol, comprising using a yeast comprising Saccharomyces cerevisiae AM12 and continuously supplying an alcohol raw material into a fermentation tank 2 to perform an alcohol fermentation; extracting the obtained alcohol liquid from the fermentation tank 2; making the cells of the AM12 yeast precipitate in the extracted alcohol liquid in a precipitation separation tank 3, to separate and recover the cells; and then returning the recovered cells, includes steps of removing a supernatant separated in the precipitation separation tank 3; adding and mixing a cleaning liquid having ethanol concentration of 14 to 20% and a pH of 6 to 8 to the remaining precipitated cells 3a of the AM12; leaving the mixture standing for a fixed time to make the cells 3a of the AM12 precipitate; and then removing the supernatant 3b to recover the AM12 contaminated with sundry bacteria.
