<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition for batter, enabling obtaining deep-fried food which has crispy palate feeling and retains the palate feeling for a long time, to provide a batter liquid containing the oil and fat composition for batter, and to provide deep-fried food using the batter liquid. <P>SOLUTION: This oil and fat composition for batter contains in an oil phase, 0.5-35 mass% (an oil phase basis) of polyglyceryl fatty acid ester whose main constituent fatty acid is behenic acid.
