A process and apparatus for thermally treating food product in a container having a headspace above the product, for example, a food can. The container is subjected to cyclical agitation which is varied in amplitude, frequency or type or any combination of these. The food cans are loaded into a wheeled basket 1 which is capable of horizontal reciprocating movement on a track 2 within a thermal enclosure 3 of a horizontal batch retort. |
