<P>PROBLEM TO BE SOLVED: To provide coagulation preparations for bean curd which moderately delay a coagulation speed, and is capable of producing good-quality bean curd. <P>SOLUTION: The bean curd coagulation preparations contain (a) polyglycerol condensed ricinoleic acid ester which has a ratio Mw/Mn of the weight average molecular weight Mw to the number average molecular weight Mn of 1.8 or above, and (b) at least one kind of inorganic salt-based coagulation preparations selected from the group consisting of magnesium chloride, magnesium sulphate, and calcium chloride. <P>COPYRIGHT: (C)2008,JPO&INPIT |
