FIELD: manufacturing method of food products. ^ SUBSTANCE: device includes band for fish trunks moving made with through holes, derived and lead spools, band for blowing down of fish fillets to moving band, cutting instrument in form of segmented blade and mechanism for attachment to cutting instrument low frequency oscillations. Device includes vacuum chamber for holding of fish fillets on the movable band, hold-down rollers, conveyor for allotment of skinned fish and conveyor for skin allotment. Besides, device includes band knife with mechanism for attachment of ultrasonic oscillations in cutting plane connected with ultrasonic generator and control unit. Control unit is connected with optical control sensors of fillets presence, pressure sensor, tap and dump valve of vacuum chamber and ultrasonic generator. Movable band is fitted with skinning device. ^ EFFECT: quality improvement of fillets surface with waste reduction and improvement of processing speed. ^ 2 cl, 3 dwg |
