<p><P>PROBLEM TO BE SOLVED: To provide a beer-like sparkling alcoholic beverage which does not use malt or barleys. <P>SOLUTION: This process for producing the beer-like sparkling alcoholic beverage, comprising fermenting a prefermentation solution, is such that a raw material solution, proper in fermentation efficiency is used to obtain the beer-like sparkling alcoholic beverage having proper various characteristics, such as, flavor and bubbly quality. Furthermore, in the process for producing the beer-like sparkling alcoholic beverage, the prefermentation solution is loaded with a pea protein obtained by extracting peas. The process for producing the sparkling alcoholic beverage includes the step of using a carbon source-containing syrup, a nitrogen source, yeast extract as at least one part of the nitrogen source, hop, and water as the raw materials; and as necessary, coloring matter, foaming/froth duration improver and spices to prepare the raw material solution, and then adding beer yeast to the raw material solution, in a manner similar to normal beer-producing process, to alcohol-ferment the raw material solution. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
