PROBLEM TO BE SOLVED: To provide a dough sheet-layering apparatus capable of making the curvature of a folded part of a layered dough substantially the same, at all times, without being affected by the number of layer. SOLUTION: The dough sheet-layering apparatus has a layering conveyor 7 which is freely movable in a cross direction with respect to the carrying direction of a carrying conveyor 3 above the carrying conveyor 3, continuously carrying a layered dough 5 and a carrying-in conveyor 9 for carrying a food dough S extended to be strip-like or sheet-like to the laminate conveyor 7, wherein a part of the carrying conveyor 3, corresponding to the layering conveyor 7, is formed so that its vertical position is configured to be freely adjustable; the carrying-in conveyor 9 is equipped above the layering conveyor 7; the layering conveyor 7 and the carrying-in conveyor 9 are formed to move together in a crossing direction, and the traveling speed of the layering conveyor 7 is lager than the traveling speed of the carrying conveyor 9.
