<P>PROBLEM TO BE SOLVED: To provide a fried food quality improving agent capable of preventing ingredients and coating from peeling off each other in cooking in oil, when producing fried food, to provide a fried food coating material containing the fried food quality improving agent, and to provide a food for frying using the fried food coating material. <P>SOLUTION: This fried food quality improving agent has modified dried albumen as the active ingredient, and the modified dried albumen is such that an aqueous solution made by dissolving 7 pts.mass of pure water in 1 pt.mass of the modified dried albumen has a pH of 9.5 or higher; the syneresis ratio of the heat-coagulated substance of the aqueous solution is 3% or lower; and carbon dioxide concentration in a vial of 250 mL volume is 1% or lower, after sealing 25g of the modified dried albumen in the vial, and preserving it for 24 h. The fried food coating material mixed with the fried food quality improver is provided.
