It is intended to provide a lactoferrin complex which has an excellent storage stability in the presence of water owing to improvements in the stability of lactoferrin in the presence of water and gastric juice, its solubility in the intestinal tract and its thermal stability during a heating treatment in an aqueous system, in which lactoferrin can get to the intestinal tract without being digested by pepsin in the gastric juice and is efficiently absorbed in vivo to thereby fully exert its physiological activity, and which can be advantageously employed in a heating step such as thermal pasteurization in the production of foods, drugs, feeds and so on; a material composition containing the same; and a method of producing the same. This lactoferrin complex is a complex of lactoferrin with a high-molecular weight electrolyte. |
