<P>PROBLEM TO BE SOLVED: To provide a method for producing separate liquid dressing which does not require complex or troublesome production processes, and can be heat sterilized, and at the same time, retains a dispersion state over a long time, once it is dispersed uniformly through shaking by a consumer, and to provide the separate liquid dressing. <P>SOLUTION: This method for producing the separate liquid dressing whose water phase part is gel-like comprises filling a water phase part containing xanthan gum, κ-carageenan and galactomannan in a container at a temperature higher than a gel point of xanthan gum, κ-carageenan and galactomannan, and gelatinizing the water phase part in the container, by reducing the product temperature of the water phase part to lower than the gel point. The separate liquid dressing whose water phase part is gel-like and which contains xanthan gum, κ-carageenan and galactomannan in the water phase part is also provided. <P>COPYRIGHT: (C)2009,JPO&INPIT |
