[Also in Division B3] A rotary dough moulding drum comprises an outer brass drum 24 in openings around the periphery whereof are located metal die inserts 20<SP>1</SP> each having a laterally extending flange 50 abutting the inner surface of the outer drum 24 against which it is tightly held by a hollow steel inner drum 26 which is secured to the outer drum by end caps attached to the inner 26 and/or outer drum 24. In assembling the moulding drum, the inner drum 26 is inserted into an assembly of the outer drum 24 and inserts 20 and a tight fit is ensured either by deforming burrs (34), Fig. 4 (not shown), on the inner surface of each insert by a sharpened leading edge (36) of the inner drum 26, or alternatively by cutting away a thin layer (42), Fig. 5 (not shown), of the inner surface or of burrs thereon by a reamer (40) mounted on the leading edge of the inner drum. The flanges 50 may be spaced apart or, as shown in Fig. 7, may be interlocked, to prevent twisting, at outwardly and inwardly-extending slots'52, 54. An upstanding peripheral wall of the insert may abut the outer drum opening at surfaces inclined to the radial, Fig. 8 (not shown) and, when the inserts are of a soft metal, the wall may be recessed within the outer surface of the outer drum for protection against wear. The die inserts (20), Fig. 1 (not shown), may define patterned biscuit recesses around the periphery of the drum into which dough is forced by a pressure roller (14), from a hopper (11) located above the roller nip, and from which recesses, after excess dough has been removed from the outer surface of the drum by a scraper (13), the moulded biscuits are deposited on a sheet (16) for removal to an oven for baking. Alternatively, Fig. 6, the inserts may each comprise a plurality of prongs 46 projecting from the outer surface of the drum for cutting cracker dough to form weakened areas whereat the baked crackers may be broken. |
