<p>In a process for making ice-cream, a closed circuit is used so that the product is not exposed to the atmos. A solid is emulsified with a liquid to form the ice-cream base. Gas is then mixed into the liquid to form a foam and to drive the product through the system. The foaming operation is performed in a gas injector.</p> |
