Determination of tannins in vinefication products

An analyzer (2) comprises a spectrometer (6) for detecting mid-infrared electromagnetic radiation after its interaction with a test sample of a vinefication product and generates, as an output, spectral data dependent on the detected radiation. The analyzer (2) further comprises a data processor (8) that has access to a calibration model, typically stored on a mass memory device (30), linking spectral data to tannin content of calibration samples and used in the determination of tannins in the test sample from the output of the spectrometer (6). The calibration model is established using mid-infrared spectral data from the calibration samples correlated with the tannin content of the same samples having been determined using protein precipitation.
