摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing a sparkling alcoholic beverage having citrus-like splendid hop perfume, and to provide the sparkling alcoholic beverage produced by the method. <P>SOLUTION: The method for producing the sparkling alcoholic beverage uses the hop subjected to esterification treatment as a raw material. In one embodiment, the method for producing the sparkling alcoholic beverage includes adding the hop subjected to the esterification treatment to wort at the time point of from the finish of boiling treatment to the start of fermentation. In another embodiment, the method for producing the sparkling alcoholic beverage includes adding the hop subjected to the esterification treatment to the cooled wort. Furthermore, the method for producing the sparkling alcoholic beverage includes adding the hop subjected to the esterification treatment to the cooled wort, subjected to the boiling treatment in a hop-added state.
