A method for preparing the fermentation enzyme water for the salting a dropwort, a method for maturing a dropwort by using the fermentation enzyme water, and a fermentation container for dropwort are provided to allow a dropwort to be salted without the deformation of texture of a dropwort. A method for preparing the fermentation enzyme water for the salting a dropwort comprises the steps of chopping the washed radish and turnip by a size of 3.5-6 mm, mixing them in a ratio of 7:3, mixing it with bamboo salt or sugar, and leaving it along for 24 hours to obtain a radish juice; boiling down a Zizania latifolia powder at 65-70 deg.C for 48 hours to obtain an extract; mixing the radish juice and the Zizania latifolia extract in a ratio of 7:3 and putting it to a fermentation container; adding the enzyme water to the fermentation container and fuming it with supplying fuming smoke through the hole formed at a cover; and fermenting the fumed enzyme water for 10-12 hours.
