<p><P>PROBLEM TO BE SOLVED: To provide a method for producing sterilized leaf vegetables reduced in number of bacteria without giving a damage to the leaf vegetables or harming the appearance of the leaf vegetables in baby leaf vegetables or a Lamiaceae herb having a large number of bacteria on its original material. <P>SOLUTION: This method for producing sterilized leaf vegetables is provided by performing liquid-contacting treatment of the baby leaf vegetables or the Lamiaceae herb as leaf vegetables directly without cutting with a solution containing hypochloric acid and/or hypochlorite, keeping the treated materials of the leaves attached with the solution at least for 1 to 24 hr at 0 to 30°C, cutting them as necessary, then again performing the liquid-contacting treatment with the solution containing the hypochloric acid and/or hypochlorite, then washing them with water and removing the water. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
