A preparation method of ice cream using raw Dioscorea batatas is provided to increase the functional properties of ice cream and enhance consumer preferences for Dioscorea batatas. A preparation method of ice cream using raw Dioscorea batatas comprises the steps of: (a) mixing 50~67g of egg and 42~58g of sugar per 300g of ice cream, stirring the mixture with 142~192g of milk heated to about 80°C, and heating the stirred mixture at 80~90°C for 30min; (b) quickly cooling the heated mixture, and adding 35~47g of fresh cream and 15~120g(5~40wt%) of raw Dioscorea batatas to it; and (c) performing the processes of homogenizing, cooling, aging, freezing, enriching, packing, and hardening. In the step (b), the raw Dioscorea batatas is prepared by peeling raw Dioscorea batatas, washing it with sterile water three times, and then completely grinding it. |
