摘要 A method for preparing handmade knife-cut noodles, wheat flakes, and cold noodles by using Rubus coreanus Miquel powder, Lentinus edodes powder, Bombyx mori powder, Cordyceps powder, and Morus alba L. powder is provided to impart various natural colors to the noodle products and prevent geriatric diseases by various effects of the five ingredients. A method for preparing handmade knife-cut noodles, wheat flakes, and cold noodles by using Rubus coreanus Miquel powder, Lentinus edodes powder, Bombyx mori powder, Cordyceps powder, and Morus alba L. powder comprises the steps of: (a) mixing and kneading 80.0~90.0wt% of wheat flour, 1.0~8.0wt% of Cordyceps powder, 0.5~3.0wt% of cold soda powder, and 9wt% of a 18%-saline solution to make a dough mixture with Cordyceps powder, and making four dough mixtures with Morus alba L. powder, Rubus coreanus Miquel powder, Lentinus edodes powder, and Bombyx mori powder by using the same mixing process as the dough mixture with Cordyceps powder; (b) firstly compressing the five dough mixtures, covering them with plastic, firstly aging them at 25~30°C for 2~4hr, folding them, secondly compressing them, and secondly aging them at 15~25°C for 6~8hr; (c) placing the secondly aged dough mixtures layer by layer, press-forming them by a noodle-making machine, and adhering them; and (d) forming the adhered dough mixtures into various shapes by an extruder.
