PROBLEM TO BE SOLVED: To provide an egg processing apparatus capable of performing efficient processing without stopping the whole system even in the case of occurrence of certain trouble, and, for example, of changing a processing arrangement while continuing the operation even if there is a need to change the processing arrangement in the downstream stage. SOLUTION: A control means 40 assigns respective buckets B, being conveyed, to transfer means in the order of the most upstream transfer means to the downstream transfer means with respect to a conveying direction of an endless conveying conveyor 20, and assigns a bucket B immediately after a bucket B assigned to the most downstream transfer means to the most upstream transfer means again, in a case where eggs E are not transferred to a part of distribution conveyors and the other contribution conveyors to which the eggs E are transferred are plural.
