A novel alkalophilic Bacillus sp. BL-31 strain is provided to secret cyclodextrin glycosyltransferase which shows very high reaction activity on transglycosylation of a functional natural antioxidizing bioflavonoid. A cyclodextrin glycosyltransferase secreted by the novel strain is provided to show the transglycosylation enzyme characteristics for producing transglycosylated bioflavonoid. A novel alkalophilic Bacillus sp. BL-31 producing cyclodextrin glycosyltransferase showing specificity to transglycosylation of bioflavonoid is deposited as a deposition no. KACC 91294P. A cyclodextrin glycosyltransferase enzyme showing high specificity on transglycosylation of bioflavonoid consists of an amino acid sequence of SEQ ID : NO. 1 produced by the Bacillus sp. BL-31. A gene encoding the cyclodextrin glycosyltransferase consists of a nucleotide sequence described as SEQ ID : NO. 2 and is registered as a GeneBank nucleotide sequence database registration no. EF363797.
