Glucose is prepared by hydrolysis of starch or an intermediate hydrolysis product thereof with an amyglucosidase preparation refined by treatment with one of a number of sulphonic or phosphoric acids or salts thereof (see Division C3). Specification 671,820 is referred to.ALSO:The glucogenic activity of an aqueous amyloglucosidase preparation may be increased by mixing with the preparation at a pH in the range of 2 to 5 an effective amount of an amyloglucosidase refining agent selected from (1) acids having the general formula: <FORM:0951486/C3/1> or R5-O-SO3H, wherein R1 is an alkyl radical of 10-15 carbon atoms, R2 is an alkyl radical of 3-5 carbon atoms, R3 is an alkyl radical of the formula CH3C(CH3)2CH2C(CH3)2 -or CH3C(CH3)2 CH2C(CH3)2 CH2C(CH3)2-, R4 is 2-ethylhexyl, R5 is an alkyl radical of 14-18 carbon atoms, n is 0, 1 or 2 and m is an integer ranging from 1 to 6 and (2) watersoluble salts of the above acids, the effective amount being a small proportion sufficient to selectively inactivate at least a major part of any carbohydrate-synthesizing enzymes present without inactivating any substantial part of the amyloglucosidase present, and amounting normally to from 0.01 to 0.2 part per 100 parts by weight of the aqueous amyloglucosidase preparation. Examples illustrate the use of the following refining agents:-sodium monokeryl benzene, monosulphonate, sodium monoisopropyl naphthalene monosulphonate, the sodium salt of the mono-3, 9-diethyl-6-tridecanol ester of sulphuric acid, sodium di-2-ethylhexyl orthophosphate, a sulphonated naphthalene-formaldehyde condensate, and the sodium salt of an aryl-alkyl ether sulphonate.
