摘要 PROBLEM TO BE SOLVED: To ensure the recycling of foodstuff and also, the mitigation of the environmental load by separately recovering the effective component from soybean broth which is presently disposed of and utilizing the effective component as an additive material etc. to the food. SOLUTION: First, a liquid containing the soybean broth component is acid-treated, and thereby, an amino acid derived from a soybean protein or a soybean peptide is produced. "A liquid containing the soybean broth component" referred to herein, is a stock solution of the soybean broth disposed of presently, a concentrated solution of the soybean broth, a diluted solution of the concentrated solution or an aqueous solution of the hardened product of the soybean broth. In the acid treatment process, a hydrochloric acid solution is added to the liquid containing the soybean broth component, and further, the soybean protein is acid-decomposed by heat at 80 to 90°C. Thus the value added of the soybean broth as a food material can be increased by converting the soybean protein to the amino acid etc. Besides, the reduction of the load factor to drain treatment facilities and the cut of drain treatment cost by an enterprise, can be achieved by utilizing the soybean broth as a food raw material.
