A method for preparing a powder containing crystalline particles of maltitol is provided to obtain the powder containing crystalline particles of maltitol within a short time through simple processing steps. A powder prepared by the method is provided to show excellent dissolution in water and high hardness, thereby being usefully used to prepare a cookie and a chewing gum. A method for preparing a powder containing crystalline particles of maltitol comprises the steps of: (a) continuously mixing maltitol syrup having a dry matter content of at least 70 wt.% and a maltitol content of at least 85 wt.% on a dry matter basis, the mixing being effected by simultaneously dispersing the maltitol syrup and maltitol containing seeds into an open rotating receptacle containing maltitol based granules whereby the maltitol syrup and maltitol containing seeds are mixed at the surface of the maltitol based granules contained in the receptacle; (b) collecting maltitol based granules from receptacle; and (c) crystallizing maltitol contained in the granules, wherein the maltitol granules in the receptacle is maintained in motion by the rotation of the receptacle. A powder containing crystalline particles of maltitol exhibits less than 3 minutes of rapid dissolution speed in water, has a hardness value of up to 500N and apparent specific gravity of 0.550-0.650 g/ml. To prepare a tablet, or a baked product or a chewing gum, the powder containing crystalline particles of maltitol is used.
